Introducing Ballesta No. 23, the latest chapter in our ever-evolving Rotating Hop IPA Series. Ballesta—Spanish for Crossbow—is more than a name; it’s the symbol of our Castle and the fearless spirit guiding this hop-driven pursuit.
While the foundation remains steadfast, the arrows are always changing. Brewed once again with Sacramento-grown barley, wheat, and oats from our friends at Admiral Maltings and fermented with White Labs Coastal Haze Yeast, Ballesta No. 23 keeps the same pillowy-soft body and luminous haze that allow the hops to rule the realm.
This edition reloads the quiver with a fresh arsenal: Alora, Dolcita, Motueka, Idaho 7, Galaxy, and a touch of Saaz. Leading the charge are Alora, Dolcita, Galaxy, and Motueka—delivering radiant waves of tropical fruit, citrus zest, and lush stone fruit. Think ripe peach, passionfruit, and candied pineapple layered with bright lime and sweet orange, while Idaho 7 adds a subtle resinous depth and Saaz lends a refined herbal lift that keeps the finish firm and balanced.
