Introducing Ballesta No. 20, the latest chapter in our ever-evolving Rotating Hop IPA series—brewed in honor of Sacramento Beer Week 2025. “Ballesta,” Spanish for “Crossbow,” is more than a name—it’s the symbol of our Castle and the fearless spirit that drives this boundary-pushing series.
Every Ballesta release is a new adventure in hop expression, and No. 20 is no exception. Fermented with Coastal Haze Yeast and built on a foundation of Sacramento-grown barley, wheat, and oats from our friends at Admiral Maltings, this brew delivers a rich, soft, and silky texture that lets the hops truly shine.

This edition features a power combo of New Zealand heavyweights Nectaron and Riwaka, backed by Galaxy and Citra for extra punch. The result? Floral citrus, juicy passionfruit, ripe peach, and lush tropical fruit, wrapped in a whisper of dank pine and soft bitterness. We even threw hops into the mash tun to elevate complexity and create a flavor profile that’s anything but ordinary.
