Introducing Ballesta No. 19 Hazy IPA—the latest release in our ever-evolving Rotating Hop IPA series. “Ballesta,” meaning “Crossbow” in Spanish, symbolizes the heart of our Castle and the bold spirit of innovation behind this series. Each release is an opportunity to push boundaries, experiment, and craft something extraordinary.
For Ballesta No. 19, we used Coastal Haze Yeast and a grain bill of 100% Sacramento-grown barley, wheat, and oats from our friends at Admiral Maltings. This combination creates an exceptionally rich, soft, and silky texture that perfectly complements the bold hop character.
The magic lies in the hops. This edition features an exquisite blend of Galaxy, Citra, Eclipse, Sultana, and Amarillo, delivering a symphony of flavors and aromas. Expect bright citrus, juicy passionfruit, ripe peach, and hints of tropical mango and pineapple, all layered with subtle resinous pine for balance. For added complexity, we incorporated hops directly into the mash tun, creating a truly unique flavor experience.
